Cilento is a land rich in agricultural and craftsmanship traditions.
The agricultural activities are carried out with traditional and non-intensive methods giving birth to high quality products which are characteristic of the famous “Mediterranean diet”: harmony of tastes, simplicity of ingredients, powerful flavors, well balanced vitamins, proteins and fats.
As organic farmers we abide by the following:
•Farm, without using any synthetic chemical products (that is artificial products, created in laboratories) nor any GM products (Genetically Modified).
•Use crop rotation against and in prevention of parasites, and weeds.
•Manure the ground (and not the plants) using only organic fertilizer and natural minerals.
“Organic” does not necessarily correlate to “high quality”. Even within organic products a customer attentive choice is essential. For example, an olive-oil obtained from organic farmed olives, but lacking the necessary attention to the farming, transformation and storage stages may still be an organic olive oil, but it surely would be of debatable quality.
For a product to be certified as “organic”, the farm must have complied with organic production methods for a period of two years minimum, which is defined as “the conversion period”.
Our entire production complies with Organic farming rules defined by the EU and then applied by each European Country and is enhanced with various quality labels, known and shared at a national (AIAB, Italian Association for Organic Agriculture, (www.aiab.it) and also European level (http://ec.europa.eu/agriculture/organic).
You will find these labels next to the products recommended by the competent national authorities and therefore complying with specific requirements, adding in this way further value to specific products and traditions that are already important for being maintained in such significant natural environments.
PDO – Protected Designation of Origin 
European Quality Label
The Protected Designation of Origin (PDO) is granted to products which are produced, processed, and prepared in a given geographical area using recognized know-how.
PGI – Protected Geographical Indication 
European Quality Label
In the case of the Protected Geographical Indication (PGI), the geographical link must occur in at least one of the stages of production, processing, or preparation. Furthermore, the product can benefit from a good reputation.
TSG – Traditional Specialty Guaranteed 
European Quality Label
A Traditional Specialty Guaranteed (TSG) does not refer to the origin but highlights traditional character, either in the composition or means of production.
PAT – Traditional Agri-Foodstuffs
Italian Quality Label
They represent a calling card of the Italian quality agriculture. The label refers to all those agri-foodstuffs whose processing, conservation, and seasoning methods are recognized and have been used all over the involved territory, according to traditional rules, for a period of at least twenty-five years.
DOCG – Controlled and Guaranteed Designation of Origin
Italian Quality Label
DOCG (Controlled and Guaranteed Designation of Origin) is a label granted to wines that have been recognized DOC wines for at least 5 years, of “particular quality value” and known at a national and international level. These wines undergo stricter controls, must be sold in bottles with a capacity of less than 5 liters, and bear a State label guaranteeing their origin and quality, as well as giving the possibility to number the bottles.
DOC – Controlled Designation of Origin
Italian Quality Label
After the 1992 enforcement of the European labels PDO, PGI, and TSG, this quality certification system has been exclusively used to distinguish quality wines. The DOC label is granted to wines produced in usually small or medium-size holdings and bearing their geographical name. Usually, the vine name follows the DOC name and the production discipline is rather strict. DOC wines are commercialized only after undergoing thorough chemical and sensorial analyses.
IGT – Typical Geographical Indication
Italian Quality Label
After 1992, also this label has been reserved to wines characterized by a geographical designation, which can be completed or not by further remarks (regarding for instance the vine). It is characterized by generally large production areas and by a less restrictive discipline than the previous ones.
European Quality Label
Consumers buying products bearing the EU logo can be confident that:
- at least 95% of the product’s ingredients of agricultural origin have been organically produced;
- the product complies with the rules of the official inspection scheme;
- the product has come directly from the producer or preparer in a sealed package;
- the product bears the name of the producer, the preparer or vendor and the name or code of the inspection body.
The Presidia support small extraordinary but threatened products, enhancing territories, recovering traditional professions and working techniques, saving from extinction autochthonous breeds and ancient varieties of fruit and vegetables. The Presidia directly involve producers, offer help to improve the quality of the products, and promote exchanges between different Countries, looking for new markets (both local and international).
The Cilento region has these Slow Food Presidia: la mozzarella nella mortella, le alici di Menaica, i gamberetti di nassa, la colatura di alici tradizionale, il pomodoro San Marzano, il cacioricotta di capra cilentana, la soppressata di Gioi.
